Growing up I ate chicken noodle soup almost every day for lunch. Why, you ask? Because it’s my favorite soup! I know people always tell you that if you eat something too much you will stop loving it. I’m here to totally debunk that theory! I still have a serious addition to chicken noodle soup! Sure, my taste buds have become more refined and I’m no longer satisfied with simply eating Campbell’s soup. But, if you offer me chicken noodle soup today I’m totally there!
Once I decided that I should put away the old familiar red and white can I started playing around with recipes to make my own version of chicken noodle soup. I will admit that there have been versions that not even the dog would eat! However, after many attempts I came up with a delicious recipe that is truly my favorite (sorry Campbell’s)!

What You Need!
- 1/4 teaspoon Paprika
- 2 pounds Boneless Chicken Breast
- 1/4 teaspoon Curry
- 2 teaspoons Chili Powder
- 1/4 teaspoon Cumin
- 48 ounces Chicken Broth
- 1/4 teaspoon Oregano
- 24 ounces Cream of Chicken
- 2 cups Shredded Carrots
- 4 cups Spiral Noodles
What To Do!
Cook the noodles according to the instructions on the package. I use Tinkyada brown rice pasta noodles for my soup because they are blood sugar friendly! Once cooked, set your noodles aside.
Cut your chicken breast into small chunks. Then slow cook the chicken using a lid on your skillet.
Next, add the chicken broth and cream of chicken to a large pan.
Add the cooked chicken, carrots, and the spices to your broth. Bring the soup to a boil and continue to stir for 10 to 15 minutes. Soup is finished when it starts to thicken and the cream of chicken soup is completely blended with the chicken broth.
Remove from heat and add the noodles to the soup. If you are using brown rice noodles and you have plans to store the soup, make sure to keep the noodles in a separate container until you are ready to eat it. If you add the noodles to the soup and then store it the noodles tend to get super mushy and that’s just gross!
This easy chicken noodle soup is my go to anytime I’m craving soup (which is like everyday). So, the next time you think about going for that red and white can, STOP! Instead make this super yummy soup to satisfy your craving. Trust me, you will thank me for it later.

Easy Chicken Noodle Soup
Ingredients
- 1/4 tsp Paprika
- 1/4 tsp Curry
- 2 tsp Chili Powder
- 1/4 tsp Cumin
- 2 pounds Boneless Chicken Breast
- 48 oz Chicken Broth

Instructions
- Cook the noodles according to the package instructions.
- Cut the chicken breast into small cubes. Cook chicken in skillet with lid.
- Combine the chicken broth, cream of chicken soup, cooked chicken, and all spices to a large pan.
- Bring soup to a boil.
- Boil for 10-15 minutes stirring regularly.
- Soup is finished when it starts to thicken and the cream of chicken soup is completely blended with the chicken broth.
- Add the noodles to soup and enjoy!
