No Bake Nut Bars Recipe

What is it about breakfast that makes everyone so excited? Personally, I could live without it. That’s right I said it! All the commercials on TV show happy people cooking a hearty breakfast or going to a restaurant and ordering hot buttery, syrupy breakfast delights and being so excited about it. The reaction I have towards breakfast is the complete opposite of those happy folks. Seriously, the first thing that I want to do when I get out of bed is not eat! I don’t know why but it’s always been that way.

Unfortunately, as I’ve gotten older I have RELUCTANTLY come to terms with the fact that it’s necessary for me to eat something in the morning due to that pesky little thing called blood sugar (stupid hypoglycemia). Once I finally admitted my need for breakfast I set out to find something that I could convince myself to eat in the morning. At first, I tried eating store bought bars but quickly found out that most of them contain some form of sugar or didn’t have enough protein in them not to mention the cost!

I quickly decided I would have to make a bar from scratch if I was to get exactly what I wanted. After much trial and error, I came up with the perfect no bake nut bars recipe (if I do say so myself) that I can make on the weekend then just grab in the morning for breakfast. Having an easy breakfast item makes it almost impossible for me to refuse to eat in the morning.

What You Need!

  • 1 cup Powered Almonds
  • 2/4 cup Chopped Almonds
  • 1 cup Chopped Pecans
  • 1/4 cup Raw Sunflower Seeds
  • 1 cup Unsweetened Coconut
  • 1 teaspoon Cinnamon
  • 1/3 cup Coconut Oil
  • 1/4 cup Almond Butter
  • 1/3 cup Honey
Nut Bars Ingredients

Tip! If you are using all pecans and no almonds in the no bake nut bars recipe reduce coconut oil to 1/4 cup. Also, You can easily replace the pecans and almonds with any nut that you prefer. Just make sure that the final measurement for nuts is 2 2/4 cups.

What to Do!

Blend 1 cup almonds until they are powered. Be careful not to blend for too long or the almonds will start to turn into almond butter!

Powered Almonds


Chop 2/4 cup almonds.

Chopped Almonds

Chop 1 cup pecans.

Chopped Pecans

Blend 1 cup unsweetened coconut until a powder. Be careful not to blend too long or it will turn into coconut butter!

Powered Coconut

Mix all dry ingredients in bowl, don’t forget the 1 tsp cinnamon!

Dry Ingredients for Nut Bars

Melt 1/3 cup coconut oil, 1/4 cup almond butter, and 1/3 cup honey until blended.

Melted Wet Ingredients for Nut Bars

Mix wet ingredients with dry ingredients.

Wet Nut Bar Mixture

Form on a wax paper covered pan.

I form mine as a rectangle to make easier to cut later.

Cover with wax paper and press firmly.

Pressing Nut Bars

Freeze for 30 minutes. Remove from freezer and cut into bars.

Package separately or separate in container with wax paper.

Refrigerate for up to 2 weeks, if they last that long! Wasn’t that super easy? I love these bars and know you will too!

No Bake Nut Bars

A super easy recipe for no bake homemade nut bars. These healthy nut bars are delicious, take no time to make, and can be stored for up to two weeks.
Course: Breakfast, Snack

Ingredients

  • 1 cup Almonds Powered
  • 2/4 cup Almonds Chopped
  • 1 cup Pecans Chopped
  • 1/4 cup Raw Sunflower Seeds
  • 1 cup Unsweetened Coconut
  • 1 tsp. Cinnamon
  • 1/3 cup Coconut Oil
  • 1/4 cup Almond Butter
  • 1/3 cup Honey

Instructions

  • Blend 1 cup almonds until they are powered
  • Chop 2/4 cup almonds in blender
  • Chop 1 cup pecans in blender
  • Blend 1 cup unsweetened coconut until it becomes a powder
  • Mix all dry ingredients in bowl
  • Melt 1/3 cup coconut oil, 1/4 cup almond butter, and 1/3 cup honey until blended
  • Mix wet ingredients with the dry ingredients
  • Form bar mix on a wax covered pan
  • Cover with wax paper and press down
  • Freeze for 30 minutes
  • Remove from freezer and cut into squares
  • Package separately or separate in container with wax paper
  • Refrigerate up to two weeks
